Salmon fillet with mango salsa

  • 250 grams of salmon fillet
  • 1 mango,
  • 1 chocolate tomato
  • 1 small red onion
  • 1 cm fresh ginger
  • 1 lemon
  • 1 tablespoon fresh coriander
  • Salt, pepper, ground allspice
  • olive oil

Salmon pour half a lemon and spices and let stand for 10 minutes. Mango cut in half a centimeter ankle. We do the same with the tomato – the skin is already blanched and peeled. Likewise we do with onions and ginger which we cut finely by adding a kidnapped coriander. We mix with each other and sprinkle with olive oil and lemon juice.

Salmon fried or grilled on the skin side – so that it was ruffled and crispy and then put in the oven heated to 40-42’C and bake 10 minutes. We put salsa on top and decorate with coriander leaves
