Bidos is a popular reindeer meat soup that is especially prepared in the north of the Scandinavian Peninsula. There is nothing complicated in it and it is very quick to prepare.
600 g reindeer meat
3 tablespoons of wheat flour
1 l meat stock
4 potatoes
2 carrots
1 tablespoon of butter
1 onion
Bay leaf
1 clove of garlic
1 tbsp sugar
salt pepper
The meat should be cut into medium cubes.
Peel and slice potatoes and vegetables as desired. Onions and garlic should be chopped finely.
Melt butter in a saucepan and fry reindeer meat on it, which we have previously sprinkled in flour. We add onion and garlic and fry until they are glassy. Next, we add carrots and potatoes and bay leaf. Pour the broth and bring to a boil. We simmer about 20-25 minutes. Finally, season with salt, pepper and a little sugar.
Before serving, sprinkle with parsley.
