– Smoked Halibut on grilled and marinated zucchini, green peas and cauliflower, paprika caramel
Heat Exchanger.
– Cream Pumpkin Soup with truffle foam and roasted pumpkin seeds
Main course
– Lamb Shank slowly cooked in caramelized gold and red beetroot, roast parsley with cumin and cinnamon, potato purée and rosemary sauce
Dessert:
– Chocolate trio with pineapple chips: chocolate mousse with almonds, chocolate mousse with cocoa and mousse with chocolate
